RECIPE | Guilt-free pasta Alfredo from Hungry Girl


Who says dieting has to suck? If you are trying to lose weight, you don’t have to sacrifice taste- but it’s all about being armed with the right tools in your arsenal.

That’s why Hungry Girl should be bookmarked on every girl’s desktop. She offers indulgent, delicious, normal-person sized portions of your favorite comfort foods but finds ingredient substitutes that slash fat and calories.

Here’s one of my new favorites! Angel hair Alfredo – less than 100 calories a serving! I had a big workout tonight so I had two servings. Grand calorie count? 190 calories. And I am totally full and satisfied.

Here’s what you’ll need:

-1 bag of tofu Shirataki noodles
-2 wedges of light Laughing Cow cheese
-2 tablespoons of grated Parmesan
-salt and pepper to taste

-Strain your noodles and rinse them clean of the liquid they come in
-Pat dry with a paper towel
-Microwave for one minute, then pat dry any excess liquid
-Add two wedges of Laughing Cow cheese (I used garlic and herb)
-Microwave for an additional minute
-Stir well. Sprinkle with Parmesan cheese, salt and pepper to taste.


That’s it! Two minutes, less than 200 calories, and a simply satisfying healthy dinner. The Shirataki noodles definitely have a different consistency than regular pasta, but they take on the flavor of whatever you cook them in. Easy, delicious, and low-cal!
