Recipe | “Skinny” Buffalo Chicken Pizza with Cauliflower Crust


With Super Bowl Sunday just around the corner, we can all anticipate the inevitable: New Year’s resolutions go out the window, and in comes hearty, greasy, unhealthy (but delicious) comfort foods: chicken wings, nachos, and pizza (to name a few).

I’ve been trying to stay on track with my New Year’s Resolution this year by trying out some “skinny” versions of old comforting favorites — and surprisingly, a lot of them are based off of one semi-shocking ingredient: cauliflower. Last night, I decided to try out a recipe for a healthier alternative to one of my favorite foods: pizza. I had seen the recipe for a cauliflower pizza crust on Pinterest, but have been a little skeptical. C’mon, can cauliflower really taste as good as carbs?!

To our surprise, the cauliflower crust was — in a word — amazing. Flavorful, crispy, light and healthy. We topped ours with a healthier version of Drinking Made Easy’s Steve McKenna’s “Beer Drinking Fire Wings”, orange bell peppers, a hint of bleu cheese and Parmesan, and topped with McKenna’s buffalo sauce. The Crust


  • 1 head “riced” cauliflower (we used a cheese grater to get the right consistency)
  • 1 egg, beaten
  • 1/2 T Duke’s Light Mayo
  • 1/2 cup low-fat shredded mozzarella cheese 
  • 1/2 cup shredded Parmesan cheese
  • 1 tsp. Oregano
  • 1 tsp. basil
  • 1 tsp. dried onion flakes
  • 1 tsp. garlic powder
  • Salt and pepper to taste

Preheat oven to 400*. Use a cheese grater to “rice” your cauliflower into a medium-size mixing bowl. Once grated, transfer the cauliflower to a skillet over medium-high heat for 6-8 minutes. Transfer cauliflower back to your mixing bowl. Add the beaten egg, mayo and seasonings, and stir the mixture until well blended. 


On a well-greased cookie sheet (or a pizza stone, if you have one), spread the mixture out evenly until you reach your desired shape and size, about 1/4″ deep. Bake for 20 minutes or until the crust is golden brown and crispy.


“Skinny” Version of Steve McKenna’s Buffalo Chicken Topping


  • 1 pkg. lean chicken breast strips
  • Crystal hot sauce to taste (1 cup)
  • Sriracha hot sauce
  • Chipotle flavored Tobasco
  • Cayenne pepper
  • Black Pepper
  • I Can’t Believe It’s Not Butter
  • Fresh chopped garlic
  • Worcestershire Sauce
  • 1 orange bell pepper, chopped
  • Bleu cheese crumbles
  • Shredded Parmesan cheese

Cover a sheet pan with the wings and bake until golden brown. While the chicken is cooking, mix together the Crystal hot sauce, Sriracha, Tabasco, Worcestershire, cayenne pepper and  pepper in a medium sized bowl. After the chicken is cooked, toss them in a frying pan with the garlic and I Can’t Believe it’s Not Butter. Add your sauce mix to the pan and let the chicken soak up the sauce.

With the remaining sauce, spoon it over the cauliflower crust to make a spicy base for your toppings. Cut up your chicken strips into bite size pieces and top your crust to your taste. Add orange bell peppers, lightly sprinkle with bleu cheese and Parmesan, then drizzle some of the remaining sauce over the entire pizza.

Pop in the oven for another 5-10 minutes, and voila! A healthy, spicy, delicious “pizza!”
